BBQ!
| Salsa barbecue affumicata al Tarry Souchong. L'ho improvvisata perché oggi ci siamo concessi delle lombatine d'agnello alla griglia e che vuoi fare? Non ci vuoi mettere su una bella salsa barbecue? Ecco. Cipolla, aglio, soffriggere. Zucchero, imbrunire, pomodori datterini senza buccia, poi un goccio di vino bianco, sale, un po' di miele. E per sfumare, una tazzina di Tarry Souchong concentrato. Devo dirlo, che la mangerei col cucchiaio? | Smoky bbq sauce flavoured by Tarry Souchong. I improvised it because today we allowed ourselves some grilled lamb loins and wouldn't you put some bbq sauce on them? That is. Onion, garlic, stir fry. Sugar, brown it, then small peeled cherry tomatoes, a sip of white wine, salt, some honey. And, to reduce, a small cup of concentrated Tarry Souchong. Do I have to say I'd eat it with a spoon? |

Un Tuocha d'annata
| Credevo che fosse vuota. Pensavo in tutta franchezza che quella scatola di tuocha acquistata più o meno vent'anni fa fosse lì solo come ricordo. Immaginatevi la sorpresa quando l'ho aperta e all'interno ho trovato ancora mezzo nido di favoloso Pu'er pressato, stagionato quindi per vent'anni. Il Pu'er è in pratica l'unico tè da invecchiamento. In questo caso si trattava di una scatola di Xiaguan Xiao Fa prodotto nello Yunnan all'incirca nel 1997, visto anche che il TMC indicato dall'importatore si riferiva alla fine del '99 e che per il tè consideriamo un TMC superiore ai diciotto mesi. Il Tuocha era scuro e perfettamente conservato, nell'armadietto di tè e caffè dove la temperatura e l'umidità sono pressoché costanti. Tre grammi di foglie hanno retto otto infusioni consecutive da 125 cc progressivamente da quindici secondi a un minuto e mezzo, utilizzando una tazza cinese di gres con coperchio come se fosse un gaiwan e versandolo via via nelle coppette giapponesi che Elena ha comprato a Matsumoto. Quando mi sono reso conto di aver bevuto un litro di tè mi sono fermato, ma l'infusione era ancora carica e saporita e probabilmente sarei potuto arrivare a dieci o dodici senza problemi. A volte, dimenticare è un bene. | I thought it was empty. I firmly believed that tuocha box bought around twenty years ago was there only as a memory. Try to imagine my surprise when I opened it and found inside it half a nest of fantastic pressed Pu-erh, aged for twenty years. The Pu-erh is actually the only tea for ageing. This one was a box of Xiaguan Xiao Fa made in Yunnan around 1997, as I could deduce from the importer label which showed a DMD referred to 1999 and knowing that tea has a DMD of over eighteen months. The Tuocha was dark and perfectly preserved inside the tea and coffee cabinet where temperature and humidity are stable. Three grams of leaves allowed eight 125 cc infusions starting from fifteen seconds up to a minute and a half, using a chinese gres mug with lid as a gaiwan and pouring it into those little japanese cups that Elena bought in Matsumoto. When I realized I had sipped a whole litre of tea I stopped, but the liquor was still deep and tasty and I could probably do up to ten or twelve infusions without any problem. Sometimes, forgetting is a benefit. |

Recovering
